TAHINI BRUSSEL SPROUTS WITH BACON


Hands down, brussel sprouts are my favorite thing to eat in the fall. While they are great alone, brussel sprouts paired with bacon is a match made in heaven. I’m sharing this recipe because it’s one I make often for my family and it’s always a hit! Try out the tahini sauce and you won’t be able to stop eating them!

Here’s what you’ll need:

  • 2 cups brussel sprouts, halved
  • 2 tbsp avocado oil
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3 pieces uncured bacon
  • 1/4 cup tahini
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp warm water
  • 1 tsp parsley

Preheat oven to 375 degrees. Prepare brussel sprouts by washing and halving all and putting in a large bowl. Drizzle avocado oil, garlic powder, salt and pepper and mix until all brussel sprouts are covered.

Transfer brussel sprouts to a large sheet pan, making sure none are on top of each other. Cut the slices of bacon into small pieces and add to the pan.

Bake for 20-30 minutes, until brussel sprouts are tender but crispy, and bacon is fully cooked.

Whisk together tahini, olive oil, lemon juice, water and parsley in a small bowl to prepare the tahini sauce. Drizzle over brussel sprouts and bacon and serve.
