
When cooked right, I think carrots can really be the star of a dish. Call me crazy but these sweet and salty roasted carrots are like little candy bites on a plate paired with a protein. Roast them in the oven long enough where they are caramelized and super tender, drizzle some honey, and enjoy an incredible side dish of carrots. Perfect for Thanksgiving dinner, dinner parties and any kind of hosting. Give it a try!
Here’s what you’ll need:
- ~ a dozen large orange or rainbow carrots
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 tsp rosemary
- 1/2 tsp smoked paprika
- 1 tsp garlic powder
- 2 tbsp honey or maple syrup

Preheat oven to 400 degrees. Line a sheet pan or large baking dish with parchment paper. Peel all of the carrots and remove the stems.

In a small bowl, mix together the olive oil, salt, pepper, thyme, rosemary, paprika and garlic powder to form a paste-like marinade. Pour the mix over the carrots and cover all of them completely, lining them up next to each other on the baking sheet.

Bake for 25-40 minutes, depending on the thickness of your carrots, until they are caramelized and browned. Drizzle the honey on top and bake for an additional 5 minutes. Remove from oven and serve immediately for best results.
