SPICY MASHED SWEET POTATO

While we often see a sweet over savory take on sweet potatoes during Thanksgiving, I tend to prefer savory. I think sweet potatoes are amazing because they’re so versatile and really take on the flavors that you give it. This recipe is a personal favorite: spicy mashed sweet potato. The recipe is simple, the flavors are both sweet and spicy, and the potatoes are so creamy! Even better? They’re 100% gluten-free, dairy-free and sugar-free.

Here’s what you’ll need:

  • 6 sweet potatoes
  • 1/4 cup ghee
  • 1/2-1 cup unsweetened almond milk
  • 1 tsp chili powder
  • 1/2 tsp red pepper flakes
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp fresh chopped parsley

Preheat oven to 400 degrees. Place all six sweet potatoes on a rack in the oven and bake for 30-40 minutes depending on size. Turn oven off and leave potatoes inside.

Once the oven has cooled down, remove the potatoes and peel the skin off (this should be easy due to the rest time).

In a large bowl, combine the peeled sweet potatoes, ghee, almond milk and all spices. Whip on high speed using a hand mixer, adding additional almond milk if needed for smoothness.

If needed, reheat by transferring to a serving dish and heating for ~10 minutes in the oven at 350 degrees. Serve immediately to 6-8 people.
