PALEO CHICKEN TENDERS


Who doesn’t love crispy chicken tenders?! It’s such a good-to food for so many that I wanted to create a lightened up version that tastes just as yummy. These chicken tenders are paleo but you honestly wouldn’t know it if I didn’t tell you. They’re crispy, flavorful and comforting… and disappear quickly. Give it a try!

Here’s what you’ll need:

  • 1 egg
  • 1/2 cup almond flour
  • 1/3 cup tapioca flour
  • 2 tbsp arrowroot starch
  • 1 tbsp garlic powder
  • 1 tbsp parsley
  • 1 tbsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 lb raw chicken tenders
  • 1/3 cup avocado oil

In a small bowl, whisk egg and set aside. In a medium sized bowl add almond flour, tapioca flour, arrowroot starch and all spices and whisk.

Coat chicken tenders by dipping in egg, then flour mixture. Continue the process until all chicken is breaded.

Bring avocado oil to a simmer on a large pan. When heated, add chicken tenders without over-crowding and cook for about 5 minute on each side, until browning.

Remove from heat, serve immediately or refrigerate for up to 5 days.
