I don’t think I can let October go by without making apple crisp at LEAST once (but probably like five times). A lot of apple crisp recipes out there are full of refined sugars, dairy and flour. This recipe offers a healthier alternative that tastes just as good (or even better in my opinion) which uses maple syrup as a sweetener and cinnamony gluten-free oats. Give it a try with all of those apples from the orchard!
Here’s what you’ll need:
- 4-5 apples, cut into slices
- 1 tbsp lemon juice
- 2 tbsp + 1/4 cup coconut oil, melted
- 2 tbsp + 2 tbsp maple syrup
- 1 tbsp + 1 tbsp cinnamon
- 1 tsp vanilla
- 1 cup gluten free oats
- 1/2 cup almond flour
- 1 tsp salt

Preheat oven to 350 degrees and begin by slicing the apples thinly and removing any seeds. Add to a large bowl with the lemon juice, 2 tbsp coconut oil, 2 tbsp of maple syrup, 1 tbsp of cinnamon and vanilla. Mix well and transfer to baking dish.

In a separate bowl, combine the oats, almond flour, salt, and remaining coconut oil, maple syrup and cinnamon. Mix until all oats are covered.

Transfer the oat mixture to the baking dish and fully cover all of the apples with oats.

Bake the apple crisp for 50-60 minutes, until the oats are browned and crispy and the apples are caramelized. Serve immediately or store in the refrigerator for up to 4 days.
