Attention chocolate lovers — there’s no need for cutting down on chocolate when you can make it paleo! That was my goal when making this double chocolate loaf stuffed with chocolate chips and warm homey tastes. Chocolate actually has a lot of health benefits because it’s high in antioxidants and can help your heart health, so don’t cut it out! This loaf is dangerously addicting and also happens to be free of gluten, grains and dairy. What’s not to love?!

Here’s what you’ll need:
- 3 ripe bananas
- 1 egg
- 1 tsp vanilla extract
- 1 tsp apple cider vinegar
- 1/4 cup maple syrup
- 1/4 cup almond butter
- 1.5 cups almond flour
- 2 tbsp coconut flour
- 1/4 cup cacao powder
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp salt
- 1/3 cup + 1/4 cup dairy-free chocolate chips

Preheat oven to 350 degrees. Grease a bread pan with coconut oil and set aside. Begin by mashing the bananas in a medium sized bowl until there are no large chunks.

Add in the egg, vanilla, apple cider vinegar, maple syrup and almond butter. Mix until fully incorporated and set aside.

In a large bowl, combine all of the dry ingredients (almond & coconut flour, cacao powder, baking powder and salt) by whisking together.

Pour the wet ingredients into the bowl with the dry ingredients. Mix until just incorporated. Add in 1/3 cup of chocolate chips (I used Enjoy Life mini chips).

Pour the mix into the bread pan and spread evenly. Top with the rest of the chocolate chips and bake for 25-25 minutes, checking for doneness with a toothpick. Makes 12 slices.
