DIJON APPLE CIDER PORK CHOPS

I’m always looking for more ways to cook weeknight dinners that taste great but don’t take a ton of effort. These dijon apple cider pork chops are the exact kind of meal I love! You can make these in a few simple steps and have them on your table ready to eat in 20 minutes. These pork chops are a little sweet and a little smoky, pair well with roasted veggies, and make great leftovers!

Here’s what you’ll need:

  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp avocado oil
  • 1 lb pork chops
  • 1/2 cup apple cider vinegar
  • 1 tbsp dijon mustard

In a small bowl, whisk together chili powder, paprika, garlic powder, salt and pepper to make the seasoning mix.

Cover the pork chops with avocado oil and sprinkle on the seasoning, covering both sides completely and evenly. Transfer to a large pan over medium-high heat and cook for about five minutes before flipping.

Whisk the apple cider vinegar and dijon mustard together in a small bowl and brush heavily onto the pork chops once flipped. Cook for another 5-10 minutes depending on thickness and flip again to cover with the dijon mixture.

Remove the pork chops from the pan, serve immediately and enjoy. Store in the refrigerator for up to four days.
