
The holiday season and colder months always remind me of sweet flavor combinations like cranberry and rosemary. I wanted to create a new savory dish using the flavors that was simple yet tasty. This cranberry pork chops recipe can be made in just a few steps and are perfect for a quick and flavorful dinner!
Here’s what you’ll need:
- 2 tbsp avocado or olive oil
- 4-5 medium sized boneless pork chops
- 2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp garlic powder
- 2 tsp rosemary
- 1.5 cups fresh cranberries
- optional: fresh rosemary springs

Heat oil on a large skillet and over high heat and preheat oven to 375 degrees. Season the pork chops with the salt, pepper, garlic powder and rosemary by rubbing on both sides. Add the pork to the skillet.

Cook for 3-5 minutes and then flip to get browning and crisp edges on each side. Add the cranberries to the skillet and fill all empty spaces with them. Top with fresh rosemary sprigs and transfer to the oven.

Bake for 10-15 minutes, until the pork is fully cooked and about 145 degrees in the center. The cranberries should be soft and bursting. Allow a few minutes to cool and serve the pork with the cranberries on top.
