CINNAMON VANILLA CHIA PUDDING WITH FRUIT COMPOTE


Sick of overnight oats? Try chia pudding! You can make this one easily, let it sit in the fridge, and have it for breakfast or snacks throughout the week. Use your favorite seasonal fruits like apricots, plums, peaches or pluots to make a sweet fruit compote that makes for the perfect bite!

Here’s what you’ll need:

  • 2 cups nut milk
  • 1 tbsp cinnamon
  • 1 tbsp vanilla
  • 1/2 tsp sea salt
  • 3/4 cup chia seeds
  • 4 apricots, plums, peaches or pluots
  • 1 tbsp lemon juice

In container with at least three cups of volume, mix together nut milk, cinnamon, vanilla and salt. Add in the chia seeds and whisk until combined. Let set in refrigerator for at least 3 hours.

Remove seed from apricots, plums, peaches or pluots, then chop into small pieces. Add to a small saucepan with lemon juice over medium-high heat. Bring to a boil and reduce until there are no big chunks left.

Remove fruit compote from heat and allow time to cool completely. When the chia pudding is done, spoon into small containers and top with compote. Makes 2-4 servings.
