CHOCOLATE CHUNK BANANA BREAD


Alright I admit it, I have a HUGE sweet tooth. I’ve seen a few health-based food bloggers make banana breads, and they always look incredible, so I had to try my own! This is actually the first time that I’ve completely written my own recipe for a baked good. Baking is a bit more out of my comfort zone than cooking — looks of measurements scare me. But I’m telling you guys… this is the real deal. You NEED to try this recipe and get a chance to swap out classic sugary banana bread with this.

Here’s what you’re gonna need:

  • 2 ripe mashed bananas
  • 2 eggs, lightly beaten
  • 1/4 cup of maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup of coconut oil, melted
  • 1.5 cups of almond flour
  • 1/3 cup of coconut flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp of ground cinnamon
  • 1 dark chocolate bar, cut into chunks

Preheat oven to 350 degrees and grease a loaf tin with coconut oil. Mash the bananas completely, and add in the eggs. Add the maple syrup, vanilla, and melted coconut oil (once it has cooled) and mix thoroughly.

In a separate medium bowl, combine dry ingredients (almond flour, coconut flour, baking soda, salt and cinnamon) and whisk together.

Add whisked dry ingredients to the bowl of wet ingredients and fold until combined. Fold in the chopped dark chocolate.

Pour batter into the greased loaf tin and top with additional dark chocolate chunks or any other desired toppings. Bake for 30-40 minutes, checking periodically with a toothpick. Let cool before slicing and enjoying!  


CHOCOLATE CHUNK BANANA LOAF

Ingredients

  • 2 ripe mashed bananas

  • 1.5 cups of almond flour
  • 1/3 cup of coconut flour

  • 1 tbsp of ground cinnamon
  • 1 dark chocolate bar, cut into chunks

Instructions

  1. Preheat oven to 350 degrees and grease a loaf tin with coconut oil.
  2. Mash the ripe bananas in a medium bowl until there are no big pieces.
  3. In a separate small bowl, beat both eggs. Add the beaten eggs to your mashed banana and mix until smooth.
  4. Add your maple syrup and vanilla to the mixture and stir.
  5. Add the melted coconut oil after it has cooled down and stir again.
  6. In a separate medium bowl, combine dry ingredients (almond flour, coconut flour, baking soda, salt and cinnamon) and whisk together.
  7. Add whisked dry ingredients to the bowl of wet ingredients and fold until combined.
  8. Fold in the chopped dark chocolate.
