CHILI LIME SALMON WITH MANGO SALSA


Summer is upon us and it has me loving all things citrus and fruity. I always have loved whipping up this mango salsa recipe because it’s so easy and has minimal ingredients. While it works great with some grilled chicken or with tortilla chips, I love the pairing of salmon with mango. My recipe for chili lime salmon goes perfectly with the salsa and is so refreshing. Make this quick and easy meal to impress your family this summer!

Here’s what you’ll need:

  • 1 avocado
  • 1 mango
  • 2 tbsp fresh cilantro
  • 2 tbsp lime juice
  • 1/4 tsp red pepper flakes
  • 2-4 pieces salmon
  • 1/2 tsp chili powder
  • 1/2 tsp parsley
  • salt + pepper for seasoning
  • 2 tbsp olive or avocado oil

Preheat oven to 400 degrees. Remove seed and chop the avocado and mango into small cubes. Combine in a medium sized bowl.

Add the cilantro, 1 tbsp of lime juice and red pepper flakes to the salsa and mix. Season with salt and pepper and refrigerate.

Cover salmon with olive or avocado oil and season with the chili powder, parsley, salt and pepper. Drizzle with remaining tbsp of lime juice.

Bake salmon for 15-20 minutes and serve with chilled mango salsa and any other sides you prefer.
