CHAI SPICED GRANOLA


Why get store-bought granola when you can make it yourself?! This chai spiced granola recipe is extremely simple and can be made with any oats you have lying around. It makes 3 cups worth of granola and can be used for parfaits, smoothie bowls, trail mix… or just eating plain! The chai spices add extra warmth and flavor making this recipe perfect for fall.


Here’s what you’ll need:

  • 3 cups gluten-free oats
  • 2 tbsp chia seeds
  • 3 tsp chai spice mix
  • 1/2 tsp salt
  • 1/2 cup creamy almond butter
  • 1/3 cup maple syrup or honey
  • 1/3 cup melted coconut oil
  • 1 tsp vanilla

Chai Spice Mix

  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 tsp cardamom

Preheat oven to 325 degrees and line a baking sheet with parchment paper. In a large bowl, whisk together the oats, chia seeds, salt and spice mix until uniform.

In a small bowl, combine the remaining wet ingredients. Whisk together and heat in the microwave if necessary to fully melt everything.

Pour the wet ingredient mixture onto the oat mixture and mix until all oats are coated.

Transfer the oats to the baking pan and press down hard to form one big sheet of oats. Bake for 20-25 minutes, until oats are browning. Let cool completely before touching, then break into pieces and store in a container at room temperature.
