
Dinners that can be made in under 30 minutes have a special place in my heart… and this one is one of my all-time favorites. These cashew chili lettuce wraps and savory and satisfying, but are still full of great ingredients, all wrapped up in soft lettuce wraps. If you’re in the need for a quick, yummy weeknight meal, here is your sign! Try these chili cashew lettuce wraps and you won’t be disappointed.
Here’s what you’ll need:
- 1 tbsp avocado or olive oil
- 1 lb ground turkey
- 1 tbsp ground ginger
- 1 tbsp garlic powder
- salt & pepper to taste
- 1/4 cup coconut aminos
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp sriracha
- 1/3 cup raw cashews
- 6-10 lettuce wraps (I use boston lettuce)
- 1/4 cup chopped cilantro
- 1 tsp sesame seeds
- optional: avocado, shredded carrots

In a large skillet, heat avocado or olive oil on medium-high heat. When simmering, add the ground turkey, ginger, garlic, salt and pepper and fully cook, stirring every few minutes until browned.

Reduce heat to medium and add the coconut aminos, rice vinegar, honey and sriracha. Bring to a simmer, remove from heat and mix in the cashews.

Prepare the lettuce wraps — remove from stems and add vegetables like avocado, carrots or radishes.

Carefully spoon the turkey meat into each lettuce wrap without over-filling, and top with cilantro and sesame seeds.
CASHEW CHILI LETTUCE WRAPS
