If avocado in your sweets isn’t your thing… I get it. BUT, just give me one chance with this muffin recipe that you would never be able to guess has avocado in it. The avocado and sweet potato in this recipe not only serve as sources of vitamins A, C, E, K, B-6 and fiber (woah!) but also make these muffins super moist and rich. If you’re looking to start the new year off with some healthy treats, give this one a try!

Here’s what you’ll need:
- 2 ripe avocados
- 1 cup pitted dates
- 1/4 cup honey
- 1/4 cup coconut oil
- 3 eggs
- 1 large sweet potato, cooked
- 1 cup almond flour
- 1/2 cup cacao powder
- 1 tsp baking soda
- 1 tsp sea salt
- 1/3 cup dairy-free chocolate chips

Preheat oven to 350 degrees and fill a muffin pan with 12 muffin liners. Set aside. Using a food processor or blender, blend pitted avocados, dates and honey until there are no large date pieces.

Transfer to mixing bowl (you can add the rest of the ingredients in a food processor if it’s big enough) and mix in coconut oil, eggs and sweet potato.

Mix in the almond flour, cacao powder, baking soda and salt until just combined.

Evenly scoop the mixture into the muffin liners and top with a sprinkle of chocolate chips. Bake for 30-40 minutes or until a toothpick comes out clean.
