APPLE CIDER DONUTS


Some of my greatest memories of New England autumns are going apple picking at our local orchard and digging into apple cider donuts and hot cider afterwards with my family. I wanted to create a recipe that reminded me of those same flavors that I could make at home, and that’s how I came up with this recipe for gluten-free, dairy-free, refined sugar-free apple cider donuts!


Here’s what you’ll need:

  • 1.25 cups 1:1 GF flour 
  • 2 tbsp coconut flour
  • 1/2 tsp salt
  • 1/4 tsp cream of tartar
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 cup coconut sugar
  • 1/3 cup melted coconut oil 
  • 1 egg + 1 egg white
  • 3/4 cup apple cider 
  • coconut sugar + cinnamon for coating

Preheat oven to 325 degrees and grease a donut pan with coconut oil. Combine dry ingredients (1:1, coconut flour, salt, cream of tartar, cinnamon and pumpkin spice) in a large bowl and whisk together.

In a separate bowl, mix together the coconut sugar, melted coconut oil, eggs and apple cider.

Pour into the dry ingredients bowl and fully incorporate. Carefully pour the mix into the donut pan (the mix should be enough to fill 8-10 molds) and bake for 12 minutes.

While the donuts are baking, mix 3 parts coconut sugar and 1 part cinnamon in a small bowl. Remove donuts from oven and immediately coat with the sugar mixture. Serve immediately for best quality.
