These chicken meatballs look like ordinary chicken meatballs, but they’re packed with veggies. They look and taste so good, you won’t even know you’re sneaking in a helping of veggies in every meatball. They also bake in under 20 minutes, which is just enough time to boil some water for your favorite pasta and add some sauce on top!!

Ingredients
2 lbs ground chicken
2 eggs, beaten
1 packed cup shredded zucchini (about 1 zucchini)
1 + 1/2 packed cups shredded carrots (about 3 carrots)
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
2 tsp italian seasoning
1/4 tsp red pepper flakes
Olive or avocado oil for cooking
Optional: chopped basil leaves for serving
Directions
- Preheat oven to 375 degrees and grease a large baking dish or sheet pan with oil
- In a large mixing bowl, combine the ground chicken, eggs, shredded veggies, & spices. mix well with clean hands or a spatula to incorporate.
- Use a large cookie scoop or clean hands to form the meatballs into balls (roll with a little oil on your hands to make them perfectly shaped) and add to the baking dish.
- Bake for 18-23 minutes, depending on size, or until they reach an internal temp of 165 degrees. there will likely be some excess fat on the bottom of the pan which you can discard.
- Either serve immediately or keep in an airtight container in the refrigerator for up to 4 days!
