These delicious BBQ stuffed sweet potatoes are hearty and delicious. The tangy BBQ chicken, combined with the sweetness of the sweet potatoes make these a mouthwatering weeknight meal you will be craving all day long. And to top it all off, you can make extra to bring to work for lunch meal-preps. Make these once, and you will have a hard time not making these a part of your regular rotation!

Ingredients
- HOMEMADE BBQ SAUCE:
3oz tomato paste
2 tbsp olive oil
2 tbsp apple cider vinegar
2 tbsp honey
1/4 cup coconut aminos, soy sauce, or tamari
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
pinch of salt & pepper
- STUFFED SWEET POTATOES
2 lbs chicken breast
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
3-5 medium sweet potatoes (you’ll have enough chicken for 5)
1 cup homemade BBQ sauce (if you’d rather buy one, I recommend this one)
2 cups chopped broccoli florets + oil & salt for cooking
1/3 cup chopped green onion
Directions
- For the BBQ sauce: just whisk everything together in a bowl until smooth!
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Season the chicken with all of the seasonings, add to the baking sheet, and place in the oven for 30 minutes.
- At the same time, add another baking sheet with your sweet potatoes to oven as well. Before baking, pierce each potato a few times with a fork.
- When the chicken is done, shred it up and toss with 3/4 cup of the bbq sauce, reserving some for topping.
- When the sweet potatoes are tender to a fork (about 45 minutes but will vary based on size), slice them down the middle and mash the insides. Stuff them well with the bbq chicken. add the chopped broccoli to the baking sheet, cover with oil and salt, and bake on 400°F for another 10-12 minutes.
- Remove from the oven, top with a BBQ drizzle and the broccoli, add some chopped green onion on top and enjoy!!
