I have a confession to make: I have spent way too much money on Starbucks egg bites over the years. But these homemade egg bites are saving my bank account and are making meal prep so easy! The kale, mushroom, and cheddar combo is so simple and so tasty. I have been working on perfecting this recipe, and now it is all I want to make for breakfast!

Ingredients
10 eggs
2 cups full fat cottage cheese
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1 cup finely chopped kale
6-8 baby bella mushrooms, finely chopped
2/3 cup shredded cheddar cheese
Directions
- Preheat your oven to 300 degrees and grease 2 egg bite molds or a muffin tray generously with oil.
- Add all of the eggs, the Hood country style cottage cheese, and the spices to a blender or food processor. blend on high until everything is completely blended.
- Fill the molds or muffin tray with the chopped kale, mushrooms, and shredded cheese, spreading out everything evenly. pour the egg mixture on top to fill each one.
- If using an egg mold, add to another larger pan with an inch of water. bake for 40-50 minutes, until a toothpick comes out clean.
- Let cool completely before popping out of molds/muffin tin and store in an airtight container in the refrigerator for up to 5 days.
- To reheat, airfry for 5-10 minutes or microwave for 1-2 minutes.
