This gluten-free and dairy-free hidden veggie turkey meatloaf is perfect for a cozy weeknight dinner that takes little effort but tastes amazing! There are shredded carrots and zucchini in the meatloaf that seamlessly mix into the turkey mix so you don’t taste them at all but get the benefits from the veggies. Just mix everything in one big bowl, transfer it to a loaf pan, top with a simple three-ingredient glaze and bake! It doesn’t get any easier than that.

Ingredients
- MEATLOAF
2 lbs ground turkey (93% lean recommended)
1 cup grated zucchini, excess liquid squeezed out
1 cup grated carrots, excess liquid squeezed out
1 egg, beaten
2/3 cup almond flour
2 tsp salt
1/2 tsp black pepper
2 tsp garlic powder
2 tsp oregano
1/4 cup coconut aminos or tamari
1/3 cup sugar-free ketchup
- GLAZE
1/2 cup sugar-free ketchup
1/4 cup coconut aminos or tamari
2 tbsp maple syrup
Directions
- Preheat your oven to 375 degrees and grease a loaf pan or line it with parchment paper. Set aside.
- In a large mixing bowl, combine the ground turkey, grated zucchini and carrots, egg, almond flour, spices, coconut aminos, and ketchup.
- Incorporate until it’s a uniform mixture, then transfer to the loaf pan. Press down so the turkey mix fills the loaf pan and has a flat top.
- In a separate bowl, whisk together the ketchup, coconut aminos, and maple syrup for the glaze. Pour the glaze on top, spread it evenly, and place the meatloaf in the oven.
- Bake for 40-50 minutes, or until the turkey is fully cooked at a temperate of 165 degrees. Remove from the oven and let cool completely before carefully removing the meatloaf from the pan and slicing into ~8 pieces.
- Enjoy immediately or store leftovers in the refrigerator for up to four days in an airtight container.
Notes
- As a sub for the almond flour, you can replace it with breadcrumbs if you are not gluten-free.
